However, there is a twist! I decided to #1 try my first sourdough inclusion loaves (1) being cheddar cheese and (2) being everything bagel/garlic and onion seasoning. However, I had a fun thought of a fun class activity that I did in elementary school that I thought would be cool to include on my blog – making homemade butter! I will be taking you along on my bread and butter making journey. When searching for a recipe to make butter, I also decided to share my process for the everything bagel loaf and butter making, with NotebookLM and it gave me some interesting resources. I have embedded a few throughout this blog post, the first one being the infographic below!

This infographic was created using NotebookLM, a generative AI powered platform

This is a mind-map flow chart created by Notebook LM, a generative AI powered platform. I didn’t find it the most helpful, but it was cool to experiment and try out the different features.

For the sourdough, I have a typical recipe/baking ratios that I like to use. This includes 350-375g of water, 10g of salt, 80-90g sourdough starter and 100-200g of whole wheat bread flour and 300-400g of white bread flour (you should have 500g total). This recipe varies, because whole wheat flour absorbs more water. So if I add in more whole wheat flour, I also, add more water to my recipe.

This is an audio recording also from NotebookLM, I put all the images I took during the process and it created this audio recording on the process of making sourdough and butter.

My butter making process was interesting, I thought that without a machine, only a mason jar and my arm that it would take a really long time. However, in around 12 minutes, I had butter! It was an interesting process and I liked getting the opportunity to clean and prepare the butter into “stick” form. When I did this in school we only ever practiced shaking the butter and then saw the final product after the teacher had prepared it. The butter was definitely softer than I thought it would be but after some time sitting in ice water, it became easier to work with.

I don’t know much about the science behind butter making but I believe that this video Notebook LM made was really informative. In the second half of the video, it discusses what heavy cream is and what happens when you shake the emulsified liquid and how it turns into butter which was super interesting. I compared it to this website Massachusetts farm to school which discusses similar information about making butter in a mason jar. after comparing the two Notebook LM did a decent job.

This Video was created using Notebook LM, a generative AI powered platform. This was probably my favourite feature on Notebook LM.

Overall, this was a really informative process. I can also see after using NotebookLM how this generative AI source could be really useful as a student because it offers multiple ways to learn information. As a student, you will need some background knowledge to ensure the information is factually correct. As a teacher, NotebookLM could offer great quick videos, podcasts, and more to foster UDL principles and diversify ways students can learn information.

This week I choose to go back to my roots and make some good old fashioned bread.
